Does anyone know why on days 3 thru 5 no veggies with the protein??

Because you're retraining your pouch to accept protein in a system that has been proven hundreds of times. You start with liquid protein, then soft protein, firm protein and land on solid protein.
By eating primarily protein and not veggies or other things, (there are bits n' pieces of them in the recipes though) your pouch gets full of what stays with it longest and encourages weight loss by keeping you full so that you don't go seaching for more food. During this week it's important for the retraining of your pouch to process the protein., and fruit and veggies have some carbs in them. Since you're concentrating on breaking a carb habit it's best to administer as few as possible to your body. Day 6 style eating its important to introduce small amounts of veggies and whole grains so that you're getting everything that your body needs for most efficient operation.
